It's the finals of Great British Menu. In today's program, the finalists cook their starters, which will be tasted and scored by the Great British Menu judges, and in a twist to the competition, there's a new addition to the judging panel.

Scotland Starter,

This week it's the turn of the Scottish chefs; Michael Smith, Tony Singh, and Alan Murchison. Today it's the battle of the starters. So which dish is going to fly the flag for Scotland? Will it be cock-a-leekie terrine, pigeon salad, or Scotch pie?

Today the Scottish chefs are all fighting for supremacy in the fish course. So who's going to come out on top? Will it be the lobster cocktail cooked four ways, lobster with vegetables, or mussels and langoustine with sorrel soup and tattie scones?

Today it's the battle of the main courses, as the Scottish chefs go all out to win, with their takes on hogget Scotch pie with peas and carrots, steak and chips with tomato relish and lamb with haggis, pearl barley, and turnip puree.

Today it's the battle of the main courses, as the chefs from the North West – Aiden Byrne, Lisa Allen and Johnnie Mountain – square off. The main course is a pivotal point of the judging, so which dish will get top marks?

Today the chefs from the Central region – Richard Bainbridge, Daniel Clifford and Will Holland are all out to impress with their fish dishes: crab in barley soup with smoked oyster, hay-baked rainbow trout and beetroot cured sea trout.

This week it's the turn of the chefs from the South West - Henry Herbert, John Hooker and Nathan Outlaw. Today they begin their menus with the starters; rabbit with pea mousse, ham hock with pea puree and heather smoked macon with pickled beetroot.

South West Fish,

Today the chefs from the South West - Henry Herbert, John Hooker and Nathan Outlaw are all out to impress with their fish dishes: cider cured sea trout, poached lobster with courgette flowers and trout, crayfish and pike mousse.

South West Main,

It's decision time on Great British Menu for the chefs from Northern Ireland. One chef left the competition yesterday and only two remain, as they cook their entire menus for the Great British Menu judges, Prue Leith, Matthew Fort and Oliver Peyton.

London and South East Starter,

It's the turn of the chefs from London and the South East - Tristan Welch, Tom Kerridge and Anthony Demetre. Today they're out to impress with their starters; breast of lamb with crisp lambs' fry; beer-braised oxtail and ham, egg and chips.

London and South East Fish,

Today the chefs from the London and South East region – Tom Kerridge, Tristan Welch and Anthony Demetre want to score top marks with their fish dishes: wild brown trout with onion tart; crayfish Scotch egg; and brown trout, crayfish and watercress pie.

Only 8 chefs remain and they are all determined to get at least one of their dishes through to the banquet. Today they cook their fish dishes for the Great British Menu judges, who are joined by a fourth member to assist them in their decision.

It's day 3 of the finals of Great British Menu, when the panel of judges give their verdict on the main courses. 8 of the country's top chefs are competing to cook at a banquet, celebrating the very best local produce from around the British Isles.

The winners have been announced and this special documentary follows the successful chefs in the run-up to the banquet, as they make the painstaking preparations, for what is one of the most important meals they will ever cook.
